Sorting sheep casings is crucial for ensuring quality. The process classifies casings based on diameter, strength, and length:

Cleaning & Preparation

Before sorting, casings undergo several preparatory steps:

  • Slaughterhouse Collection: Intestines are removed and separated from other offal.
  • Stripping & Cleaning: The mucosa and excess fat are removed.
  • Rinsing & Flushing: Thorough washing with clean water and mild salt solutions.

Sorting Process

Casings are categorized based on:

Diameter (Caliber Sorting):

  • 16/18 mm – Thin (e.g., breakfast sausages)
  • 18/20 mm – Slightly larger
  • 20/22 mm – Hot dogs, frankfurters
  • 22/24 mm – Bratwurst, larger sausages
  • 24/26 mm+ – Kielbasa, smoked sausages

Strength & Quality:

  • Grade A: Strong, uniform, minimal defects
  • Grade B: Slight imperfections but still usable
  • Grade C: Weaker or inconsistent, often for specialty products

Length Sorting:

  • Measured and bundled into standard lengths (e.g., 91 meters per hank)
  • Longer casings reduce waste in sausage production

Packaging & Preservation

  • Preserved in a brine or salt solution to prevent drying and bacterial growth
  • Packed in airtight, vacuum-sealed containers for export
